What’s the difference between coins and gems?

Your income is measured in coins. They are the only currency that your customers will use to buy your dishes, regardless of the country ;) If you want to earn gems you can earn them by opening specific chests or buying them in the in-game store. Both of those you can spend on upgrading your truck, however only gems can be used to speed up opening chests, relocate, trips and some of the store purchases
